    Add a calculation field with the function "FormatDateTime(now()) "

    You can just type it in. The function "now()" requires no parameters.

    Each time you open the record for editing, whether or not you make changes, the field contents will be changed to the current date and time.

    Choose how you want this displayed - if you want it as a status displayed in list view I recommend choosing string.

    Go to the create libraries from templates. Search recipes. You will find lots of existing templates from which to choose!

    For example, multiple formats of table views could accomplish this.

    But, are you sure you cannot accomplish this using filters?
